Blender Banana Muffins

If you’re looking for a quick and healthy homemade snack, look no further than these banana blender muffins! All you have to do is throw everything in the blender or food processor, whiz it up, spoon it into a muffin tray and into the oven it goes.

They’re full of fibre and are sweetened with banana, so they have no added sugar, making them a great snack for babies, toddlers and older kids.

Prep Time: 10 minutes
Cooking Time: 15 minutes

Makes: 6 large muffins or 24 mini muffins
Suitable for freezing

Suitable from 6 months (once cow’s milk, egg and almonds have been introduced separately)


Ingredients
1 cup rolled oats
2 very ripe bananas
1/4 cup desiccated coconut
1/3 cup almond meal
1 egg
1/3 cup natural yoghurt
1 tsp cinnamon
2 tsp baking powder


Method:

1. Preheat oven to 180C

2. Place all ingredients in food processor or blender and blend until smooth

3. Oil a 6 hole muffin tin or line with paper cases. Divide mixture between holes, filling to 3/4 full

4. Bake for 15 minutes or until golden brown and cooked through (if making mini muffins, reduce cooking time to 10 minutes)
