Prep Time: 10-15 minutes (+ 1-2 hours in fridge)

Ingredients

1 cup pitted dates
1 cup dried apricots
1 cup desiccated coconut
2 tbsp chia seeds
⅓ cup dark choc chips


Method

  • Place dried apricots, dates, coconut and chia seeds in a food processor and process until very finely chopped.

  • Press mixture into a square slice tin lined with baking paper, pressing down firmly into the corners using the back of a spoon.

  • Place choc chips in a small microwave-safe bowl and microwave on high in 30 intervals until melted and smooth.

  • Spread chocolate evenly over apricot mixture, then refrigerate for 1-2 hours until firm before slicing into squares.

  • Store in an airtight container for up to one week.
