Choc Apricot Weetbix Balls

Snacks don’t get much more nutritious than these delicious Choc Apricot Weetbix Balls!

They’re full of fibre, low GI carbs for long lasting energy and are even a source of iron thanks to the Weetbix, chia seeds and dried apricots.

The make the perfect lunchbox addition or on-the-go snack for kids (and adults!).

Ingredients

6 Weet-Bix
1 cup dried apricots
3/4 cup dates
1/3 cup desiccated coconut
2 tbsp chia seeds
2 tbsp cocoa
1/2 cup milk powder (optional)
1/4 cup water
1/2 cup desiccated coconut, extra


Method

1. Place all ingredients except the water and extra coconut into a food processor and blitz until fine (this should take about 20 seconds)

2. Add water and process again until mixture comes together in one big ball (add a little more water if needed)

3. Spread extra coconut over a large plate. Roll mixture into small balls, then roll in coconut

4. Refrigerate for 30 minutes or until firm
